Pasta med kylling og flødesauce

Den her ret er så nemt at lave, at en opskrift næsten er overflødig :-) Jeg laver den virkelig tit, og er efterhånden blevet rimelig træt af den! Har du kogte pasta i køleskabet fra dagen før, så tager det under 10 minutter at lave retten.

100 g Pasta
100 g kyllingebryst (eller lidt mere hvis man er sulten)
1 dl fløde
smør til stegning
grøntsager, kan nemt være en frossen grøntsagsblanding
karry, salt, peber
basilikum til pynt
Parmesan

Kog pasta næsten al dente
Skær kyllingebryst i strimler og steg dem med med smør
Er de færdigstegt, putter du fløden i, samt lidt vand også. Lad fløden koge lidt i og put salt, peber og karry i.
Skær grøntsager som du vil have dem (lange strimler, terninger, store stykker…) og bland dem i. Igen, kog dem ikke for meget!
Samtidig blander du også pasta i
Færdig! Anret retten på forvarmede tallerken put parmesan og basilikum på lige inden servering.

Svinemørbrad med jordskokkesauce

Så er det igen på tide at sætte en opskrift på min blog. Hmmm hvor glæder jeg mig bare til min egen køkken!!

Dette er en nem opskrift på en meget god sauce der kan bruges til f.eks. oksemørbrad eller svinemørbrad. Jeg har fundet den på nettet. Og jeg tror faktisk at den i kraft af dens intense smag også godt kan bruges til grillmad!

Kød

Medaljoner af svinemørbrad (eller oksemørbrad) steges i pande

Jorskokkesauce (til ca. 4 personer)

150 g skrællede jordskokker
1 fed hvidløg
Timian
2 dl kalvefond
1 dl fløde
Saft og reven skal af 1/2 citron
Smør
Salt og peber

Kog jordskokkerne med kalvefond, hvidløg og timian til de er helt møre.
Blend det hele og sigt det ned i gryden igen
Tilsæt fløde, salt, peber, citronsaft og skal og kog saucen igennem.
Blend den med smørret til den skummer.

Tilbehør og grøntsager

Vælg tilbehøret efter humør: kartoffelgratin, kartoffelbåde, nye kartofler, tomatkomplot (kan være det du lavet til bruschetta, bare uden brød :-) ), gulerødder, broccoli…
Lad nu være med at koge grøntsagerne for meget, 2-3 minutter i en gryde med lidt kogende vand og låg på er nok. Det er bedst hvis du tager en gryde med kun 1-2 cm vand, put grøntsagerne i og læg låg på. De smager ikke godt hvis du sønderkoger dem igennem, det vil jeg ikke have! De skal give mere modstand til tænderne end kødet synes jeg.

Tube Chair - HAY / Kilo Design - This is another project I have been working on at molgard aps. The task was to calculate the strength and stiffness of the chair construction wich is designed with die casted connectors and round wooden bars inbetween. The chair can be used as an outdoor furniture as well as used indoor.

Life Cycle Analysis

As more as I know about Life Cycle Analysis, as less I actually really know about it! Working in this area shows that this is an extremely complex item to deal with… This post shows a few screenshots giving insight into my work (at molgard aps) with the SimaPro Software. SimaPro is the most widely used LCA software. It offers ultimate flexibility, parameterized modelling, interactive results analysis and comes with a large database included.

Danske ideer / Hans Thyge - Another thermos where I have been responsible for the developing of the plastic parts. The thermos shows the level of its content, that means at the staff in a restaurant is able to see whether the thermos is empty or filled. The glass insert hangs on springs. The work included drawing of the parts in 3D cad, conceptual and constructional work on the different parts including difficult assembling methods, tolerances, developing of the thread/lid, sourcing with chinese collaborators. (Project done on my employee time at molgard aps).

Han vidste ikke hvad han skulle stille op for at komme videre, men heldigvis var det som noget i ham var ligeglad med det. Selv om han følte at han sidste gang har tabt den største del af byrden, så var han stadigvæk meget træt. I det mindste gav det nu mening bare at komme videre, dog var han endnu ikke nået til det punkt hvor han selv kunne bestemme retningen. Han føldte som om han befandt sig i midten mellem ingenting og her, og det var godt. Han kunne se fremskridt. Men straks begyndte han igen at tænke hvordan det ville blive, nu hvor dagene igen er blevet kortere. Inderst inde svarede underbevidstheden med mørke historier, selv om han prøvede at rationalisere sig frem til noget andet. Det lykkedes ikke. Om nogen tid vil han igen befinde sig det sted hvor det ikke var ham selv der styrede dagens gang, en mørk, ubevidst kraft ville ham vise vejen og for blot at overleve var han nød til at følge med. Lige som en solsikke bliver trukket rund af solens livgivende, varme, bløde og indbydende lys på en sommerdag.

Brio / Foersom Hjort Lorentzen - (project done at my employee time at molgard aps) - The main part of the developement process was to construate a tilting mechanism for the school chair. The tilting mechanism developed has not seen before on the market. Its main elements are the chair shell in blow moulded plastic with an insert moulded rubber disc on its bottom surface. Only the rubber disc is mounted to the steel frame wich gives a nice tilting feeling. I have been responsible for the developing process of the technical parts as well as 3D cad drawings.

Tiramisu

This is my own modified recipe for the classical italian dessert Tiramisu. This is quite easy to do and tastes just so good. I usually make it the day before, that both saves you time and it tastes better when chilling in the refrigerator for a day or two.

2 to 2,5 dl of heavy cream
5 to 10 table spoons of sugar, depends on how sweet you like it
4 egg yolks
250 grams of Mascarpone Cheese (one package)
200 grams of Ladyfingers
ca. 1 dl of strong espresso coffee, I use the Nescafe instant espresso powder
ca. 5 table spoons of Amaretto, you can also use Marsala, Cognac, Cointreau or other liqueur
cocoa powder, icing sugar and other stuff to decorate before serving

Whip the cream with a bit of the sugar. In a bigger bowl, whisk the egg yolks creamy with the rest of the sugar, use the highest speed of your hand mixer. If it is possible you should do this part with one whisk only, if your hand mixer can handle that. This does not destroy the structure of the egg yolks. Mix the mascarpone into the mass, but not all at once. At the end mix the whipped cream into the mass, don’t use the hand mixer for that part.

Now, it comes to the most important part if you ask me. The tiramisu needs not to be too wet, but on the other hand not too dry as well. My secret is to use one table spoon of fluid (espresso and liqueur), for every ladyfinger :-) Use a square pan of around 20 x 20 centimeters. Put a first layer of ladyfingers into the pan, drip the espresso/liqueur onto the ladyfingers. Now put half of the mascarpone/cream mass to cover the ladyfingers. Repeat this two steps and you are done!

Decorate the tiramisu first just before serving. Serve portion wise, sprinkle the cocoa powder onto the plate as well, it has to look good!

Wogg42 chair

On this project I have been responsible on the re-engineering of the upholstery for the seat and back. The technique we used was the same used for the North Tiles / Clouds for Kvadrat. The seat and back upholstery is done in a sandwich construction with a Foam as core material. This new process makes it possible to use all kind of fabrics. Cocoon Condom Dispenser

The goal of this project was to construct a mechanism witch opens the door and afterwards pulls the bird out of the box. The mechanism had to work with a single movement by pulling the cord underneath the box. The result of this plot was a mechanism with a laser cut disc pulling several parts with cut out tracks. (Project done at my employee time at molgard aps).
